Aulis Phuket is a MICHELIN-starred 15 seat chef’s table at the beautiful Iniala Beach House Hotel, and as Simon Rogan’s first restaurant in Thailand. As with the other Aulis chef’s tables around the world, Aulis Phuket explores and experiments with hyper local ingredients, developing and perfecting flavours and techniques to create an almost entirely unique experience for the 15 guests at each service. Alongside Simon and Executive Chef, Oli Marlow, the Aulis Phuket team is led by Head Chef, Charlie Wilson.
